Professional Gelato Making - English language class

This is a theoretical and practical course that will teach you the techniques and methodologies useful for the creation and trading of Italian Handcrafted Gelato.
The price of the course is Euro 2800 + VAT.

- Conception, creation and launch of a business, planning business activities

Organizing the workplace

- How to plan and organize the gelato parlour and laboratory

Second Week 

Gelato components
- Basic concepts of product sector: raw materials and compound ingredients
- Gelato chemistry and physics
- Basics of gelato balancing techniques
- Hands-on training

Balancing techniques and work methodologies
- Production of handcrafted gelato: creating recipes for the bases and blends
- Creation of fruit gelato recipes
- Hands-on training
- Study and use of a specific balancing software
- Preparation for the sensory analysis of the results

Handouts of the teachers
During the course you will be required full time commitment. Classes take place from 9.00 am to 6.00 pm.

At the end of the course will be issued a Certificate of Participation.
